Silverside in the Varoma

Ingredients

Silverside

  • 1 lean silverside, 1 - 2 kgs - to fit comfortably in Varoma Dish
  • 1 - 2 onions, whole

Cooking Liquid

  • 1 onion, halved
  • 1 stick of celery, roughly chopped
  • 1 Large carrot, roughly chopped
  • 1 level tablespoon malt vinegar
  • 1 level tablespoon brown sugar
  • 2 bay leaves
  • to taste cloves whole
  • to taste peppercorns whole
  • 1 heaped tablespoon Vegetable Stock Concentrate (EDC)
  • 1 litre hot water
  • parsley stalks

Sauce

  • 400 g reserved and strained cooking liquid
  • 50 grams butter - or nuttelex
  • 40 grams plain flour
  • 100 grams Milk or cream, optional - i leave this out as my daughter is dairy free
  • 1- 2 tablespoons Dijon or seeded mustard
  • salt and pepper to taste

Vegetables

  • potatoes, quartered
  • carrots, chunks
  • pumpkin, chunks
  • cauliflower, florets
  • broccoli, florets

Recipe's preparation

    Cooking your Silverside
  1. Place onion, carrot, celery, into Thermomix bowl and chop for 3 seconds speed 5

    add bayleaf, brown sugar, vinegar, peppercorns, cloves and parsley stalks, veg stock concentrate and water into Thermomix bowl

    place lid into position

     

     

     

  2. Rinse piece of silverside well , under cold water -

    Place silverside into varoma dish. Ensure that there is plenty of room around the sides to allow the steam to come through the holdes in the Varoma tray. Please be aware that the meat will swell as it cooks.

    Add onion to varoma.

    Set varoma temperature - 60 minutes - speed 2

     

  3. NOTE - Cooking time will vary depending on the size of your silverside . General rule of thumb is to cook for 30 minutes per 500 grams.

    I usually cook a piece between 1kg - 1.5kg

    After the 60 minutes is up - add more water to Thermomix bowl to  refill to the 1L mark. Check that there is still plenty of room for the steam to escape through the holes in the Varoma tray.

    Reset Varoma temperature and add extra time as required by the weight of your silverside.

    Once set cooking time is finished - add another 20 - 30 minutes on varoma temperature -speed 2

    I find adding this extra time helps make the silverside very tender.

  4. Add your prepared vegetables of choice to the varoma dish - placing around silverside  (harder vegeatbles at the bottom)

    Top up water in bowl if neccesary.

    Reset varoma temperature - 30 minutes - spped 2

    Once vegetables are cooked - set aside in thermoserver to keep warm

    Wrap meat in alfoil to keep extra hot.

  5. Strain the liquid from the thermomix bowl, discarding solids and reserving liquid.

  6. Cooking your Sauce
  7. Place butter and flour into thermomix bowl and mix 5 seconds/speed 5

    Cook 100 degress - 5 minutes - speed 2

    Add 350 grams of reserved liquid -

    Cook 100 degress - 7 muinutes - speed 4

    Add cream or milk (if using),  or a touch more reserved liquid if sauce is too thick, mustard and salt and pepper - and cook 100 degrees - 3 minutes - speed 4

     

  8. Slice silverside and serve with Vegetables and sauce

Tip

We love silverside done in the varoma - so much easier than on the stove - as i could never get the heat to be gentle enough.

Our meat is always lovely and tender - but it will depend on your silverside itself.

we either purchase from a reputable local butcher - or have also found the lean Silversides  from Coles to be very good also

    Delish! Loved the mustard sauce. My husband was the only one that preferred white sauce, but the rest of us preferred the mustard sauce. I'll have to start it much earlier next time. Took around 2 and a half hours. I made mashed potatoes in a pot to go with this. Will definitely make again!

    What a great meal! I've never heard of Silverside before - let alone buy or cook it - but have seen it mentioned so many times on the Thermomix pages that I thought I should give it a go. Am delighted I did!! It pushed Thelma to the limit a couple of times (I think the plug was actually overheating, and she shut off a couple of times after going at varoma temp for 2+ hours) - but it was definitely worth it.
    I made it exactly as per the recipe above - except for the gravy - I opted to make Skinnymixer's keto creamy mustard sauce instead, which goes perfectly with it too!!

    Love this recipe. The 2 year old and 7 month old love it too. The sauce is amazing and I find the cooking time for the meat works a treat. I keep over cooking my veg though, so I need to work on the timing for that. Regardless it all gets eaten, mushy beans drenched in that amazing sauce Smile

    Love this recipe. I used salt reduce silverside and it was 1.1kgs so cooked for 1.5 hours. next time I will try putting some cloves in the meat and 2 bay leaves ontop of meat for some added flavour. Defintely the best silverside I have had so moist.

    Hi, I have previously made this, and found it too salty. I have made it since, and rinsed the beef before cooking, which made a huge difference. As I usually don't have much salt on my food, this is a better option for me. Great recipe though and the house smelled lovely from the cooking liquid! Smile

    I usually hate silverside but it came in my meat pack so had to use it. It will now be on my fortnightly rotation YUMMO!!

    The sauce wowza soooooo good I wanted to lick my plate lol

    I used 1tsp clove and 1tsp peppercorns I would be interested to know what quantity others used...

    I roasted my Veges which was a nice treat.

    Awesome..Love this recipe. Had always cooked silverside in our slow cooker, but not anymore. The silverside was cooked perfectly and full of flavour. A bonus adding all the vegetables with the silverside. Mustard sauce was easy and tasty, will add a bit more mustard next time. Thank you for a great recipe.

    So great and easy! Thankyou. I added some potato to the simmering basket towards the end and then mashed it before making the sauce. It was DELICIOUS after being steamed by the silverside water/juices. I'll be putting this on monthly rotation. Cheers!

    Cooking time for me: 1.3kg silverside. 60 min, 40min (added potatoes in steaming basket), 10min (added broccoli and cauliflower to varoma dish). Total 1hr 50min.

    Omg yum! That was amazing and the sauce was yum! Hubby even loved the liquid stock and was amazed by how much flavour was in it(i didnt even have all the fresh herbs so substitued for dried herbs that i had... i will be making this recipe again for sure!
