Spicy Lamb Meatballs

Spicy Lamb Meatballs

  • 30 g Parmesan cheese block
  • 800 g diced lamb (3-4 cm cubes), slightly frozen
  • 1 medium onion, peeled & halved
  • 1 bunch fresh parsley
  • 1 bunch fresh coriander
  • 4 level teaspoons smoked paprika
  • 3 level teaspoons ground cumin
  • 2 level teaspoons salt
  • 1 pinch cayenne pepper
  • 500 g Passata Sauce
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • 3 large zucchini (spiralised)

Recipe's preparation

  1. 1)      Grate parmesan cheese 8 sec/speed 10. Set aside. Clean & dry bowl.

    1)      Add lamb to bowl. Mince 10 sec/ speed 7. Set aside.

    2)      Chop onion, half bunch coriander & half bunch parsley, 3 sec/ speed 7. Scrape down the sides of the bowl.

    3)      Add lamb mince, 2 tsp smoked paprika, 1 tsp cumin, 1 tsp salt, combine Counter-clockwise operation/10sec/ speed 3. Roll into balls & place in simmering basket, set aside in fridge.

    4)      Add garlic, remaining coriander & parsley to bowl. Chop 3 sec/ speed 7, scrape down bowl. Add olive oil, passta sauce, 2 tsp smoked paprika, 2 tsp cumin, ½ tsp salt & pinch cayenne pepper. Add simmering basket with meatballs to bowl. Place Varoma dish & lid on top of Closed lid & cook for 15 min/varoma/ speed 3.

    5)      Add zucchini into varoma dish, cooking for a further 5 min/varoma/speed 3.

     

    6)      Serve with grated parmeasn.

Tip

Replace parmesan cheese with savoury yeast flakes for a dairy free option.
