SUI MAI DUMPLING 烧卖

  • 350g Pork fillets with a bit of fats, Dice into 1.5cm piece
  • 10g ginger, peeled
  • 2tsp sugar
  • 2tsp salt
  • 20g Corn Flour
  • 15g Dried Mushroom, soaked
  • 200g Prawn, peeled, deveined
  • 1tbsp sesame oil
  • 1/2tsp ground white pepper
  • 30g water
  • some carrot, finely chopped for garnish
  • wonton wrapper, Store bought or make your own 😉

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Method 做法
  1. 1. Place the diced pork fillet in the freezer for at least 30mins.

    2. Place ginger in the bowl, 4sec / speed 6.

    3. Add half frozen pork, mushroom and prawns into the mixing bowl, 35sec / speed 5.

    4. Add sugar, sesame oil, salt, pepper, corn flour and water, 1min / speed 2.5

    5. Oil Varoma dish and tray (or using baking paper, remember not to block the holes of the varoma)

    6. Put a heap teaspoon of the mixture onto the wonton wrapper, without sealing the top, gently push together into small purse shapes. Top with chopped carrots.

    7. Add water in the bowl, lay the sui mai/dumplings in the oiled varoma tray & dish to steam, 20mins / Varoma / speed 2.

    8. Enjoy!!

Tip

1. You can replace pork with any meat you like, even with white fish meat.
2. If you want to omit the prawns, just add more meat to make it 500g.
3. You can easily make your own vinegar dipping sauce by thinly shredding a few ginger pieces and add into some Chinese black vinegar.

    Hi Melanie, the above recipe is according to my family's taste. Of course, you can adjust it with yours too.Smile
    At the yum cha, they use lard, some using water chestnut and some will use chicken powder or MSG in the making.

    These were nice but unfortunately no where near as good as the ones that you get at yum cha, i think it might need some soy sauce in the actual mixture or something else like some spices or shallot or something to give it a boost.

    Yes you can. This recipe is very versatile, you can replace prawn with water chestnut or other meat like beef.
