Thai Chicken Burgers

  • 3 cloves garlic
  • 3 cm piece of ginger
  • 4 spring onions, roughly chopped
  • 10 - 20 g corriander, to taste
  • 1/2 - 1 fresh chilli, to taste
  • Himalayan salt, to taste
  • cracked pepper, to taste
  • 600 g chicken breast
  • 1 tbsp olive oil
  • 5 amazing grain free rolls, link below
  • lime mayonnaise, link below
  • Spinach Leaves
  • cooked onion
  • sliced avocado

Recipe's preparation

    Thai Chicken Burgers
  1. 1. Place garlic, ginger, spring onions, coriander, chilli, salt and pepper in Thermomix bowl. Chop for 3 seconds / speed 7
    2. Add chicken and chop for 10 seconds / speed 7. Form into 5 – 6 patties. Flatten slightly.
    3. Heat olive oil in a large frying pan over medium-high heat. Cook patties for 3 to 4 minutes each side or until browned and cooked through.
    4. Spread roll bases and tops with lime mayonnaise. Top bases with salad leaves, avocado, onion, patties and roll tops.

    These are fantastic. I left out coriander cause I don't like it but still lovely.  Big hit with friends

    really nice made them twice now, I eat it without the bread or mayo (diet!) with salad.
