Zucchini slice

Ingredients

7 slice(s)

  • 375 g zucchini
  • 1 onion
  • 3 bacon rashers
  • 250 g Tasty cheese
  • 125 g vegetable oil
  • 250 gSR Flour
  • 2 cloves garlic
  • 5 eggs
  • handful parsley and mint
  • salt and pepper

Recipe's preparation

  1. Grate cheese, parsley and mint 6 -8 seconds on speed 8 set aside.

    Course grate zucchini 5 seconds on speed 5 set aside with grated cheese.

    Chop garlic, onion and bacon 2-3 secondsonspeed7.Saute

    the Thermomix add the flour,eggs and oil 20 - 25 seconds on reverse speed 5 addgrated cheese

    Pour into greased lamington tin.  Bake in moderate oven for about

Tip

Sliced tomatoes can be placed on top of slice prior to baking.

Tin can be lined with baking paper - less washing up

    Thankyou for this recipe and comments - I sliced the bacon manually, substituted 50 g of cheese with Parmesan cheese, chopped zucchini less and used wholemeal SR flour - cooked beautifully in a pie dish

    I substituted the oil with milk and a little melted butter.  Then I made them in to savoury pancakes/fritters.  Absolutely perfect!  What a versatile mix, and love not having to grate/chop like making traditional zucchini slice.  Thanks.

    Ver nice! Like suggested by others I shortened the chopping times. I also used less Oil as it seemed a bit much (90grams) and was still very moist. I was also a bit short on tasty cheese but had some mozzerla in the fridge. Used that and was just as delicious!

    Very tasty. I used 4 rashers of bacon. Next time though I will reduce all the chopping times by half, the mixture was too much like a purée . No texture. Family liked the flavour.

    yumm!! less oil and cheese and added 1 tablespoon of TM veg stick concentrate (didnt add any salt and pepper ontop of that)... also sliced my bacon so it was chunky and this looked nice too

    Great recipe, quick and easy and smells fantastic cooking in the oven.  I did a little less zucchini and I also added some carrot and potato, hoping my son who is not so keen on vegetables likes it too.

    This is a great recipe. So much easier than hand chopping each ingredient . I put them into muffin pans and made them as mini quiches. I took it to afternoon tea snd everyone loved them

    Easy and tasty. Used ricotta instead of tasty cheese and leftover corned beef instead of bacon because that's what I had in fridge. Worked well with gf flour too - used plain and adding baking powder.

    Great recipe.When chopping bacon I used speed 5 otherwise bacon turns mushy.Instead of 250g of tasty cheese I used 150g tasty and 50g parmesan.
