Asian Style Mushroom Soup

500 g Liquid Chicken Stock, or bone broth
2 tbsp soy sauce
2 tsp fish sauce, or to taste
lime juice, to taste
1 tbsp sesame oil
1 tsp brown sugar
150 g fresh mushrooms, mixed (eg enoki, oyster, shitake, button)
50 g noodle, soba

  For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

  If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

Add chicken stock, soy sauce, fish sauce, lime juice and sugar to mixing bowl. Heat 6 min/100 deg/ speed 2.

Add mushrooms and cook 3 min/100 deg/

speed 2.

Add soba noodles and cook 3 min/100 deg/

speed 2. Serve hot with additional soy sauce/sesame oil/lime juice/fish sauce if desired.
