Bombay Potatoes

Bombay Potatoes

  • 500 grams Cocktail Potatoes
  • 400 grams diced tomatoes, (Can use tinned)
  • fresh coriander
  • 2 cloves garlic
  • 500 grams water
  • 1 tsp tumeric
  • 1 tsp cumin
  • 1 tsp Ground Coriander
  • 1 tsp chilli powder

Recipe's preparation

    Bombay Potatoes
  1. 1. Weigh water in Closed lid add steaming basket and halved potatoes and cook Varoma temp, speed soft for 12 minutes 


    2. Remove potatoes and discard water 


    3. Add some oil to Closed lid and chilli cook varmoa temp 5 minutes speed 1 


    4. Add garlic and Coriander to taste - blitz on turbo for 2-3 seconds, scrape down sides of the bowl 


    5. add 220g of the tomatoes, and spice mixture, cook for 5 minutes, Varoma temp speed soft


    6. Add potatoes and cook Gentle stir setting counter-clockwise operation, Varoma temp for 5 minutes, add remaining tomatoes and cook a further 7 minutes

Tip

For younger taste buds I recomend adjusting the amount of chilli or using a mild powder

    I followed the recipe, but added 1/2 finely chopped onion. I think that's what made it extra hot..... although not sure about that, but loved it anyway

    Great dish!! Nice change from oven fries or mashed potatoes. Hubby doesn't like spicy, so just used smaller amount of the spices. First recipe in my favourites!!
