The Vegetables

  • 20 grams extra virgin olive oil
  • 1 red onion
  • 2 cloves garlic
  • 1/2 teaspoon Oregano
  • 3 celery sticks sliced
  • 1 Red Capsican, chopped
  • 2 Zucchini, cut in 2cm pieces
  • 100 grams water
  • 1 heaped teaspoon vegetable stock (EDC)
  • 500 grams Cherry Tomatoes cut in half
  • 50 grams Grated Parmesan Cheese
  • 1/2 bunch Basil, leaves only, torn

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add onion and garlc. Chop 2 second, Speed 7

    Add oil and oregano, cook 100 degrees, 3 minutes, Counter-clockwise operation, speedGentle stir setting

    Add celery, capsican, zucchini, water and stock. Cook 5 minutes100 degrees, Counter-clockwise operationGentle stir setting

    Add cherry tomatoes and basil, stir in with spatula

    Serve then sprinkle with cheese

    tmrc_emoticons.) I tried this recipe tonight to serve with some fritters. It was very good, tasted very fresh. I decided to add 2 minutes of cooking time just to soften the vegies a little more, I also threw in the tomatoes at this point, all the vegies and toms turned out just right. Nice and easy as well as being a little different. Thanks tmrc_emoticons.)
