      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Turn on oven to 180C and grease and flour an oven dish big enough to take the souffle with it rising by one third.

  2. Grate cheese and set aside. 

  3. Steam broccoli, then blend briefly and set aside.

  4. Make a bechamel with the milk, flour and butter. When it is done, add the cheese, broccoli and egg yolks.

  5. Either set aside this mixture and wash and dry the TM bowl then whisk egg whites until stiff, or whisk egg whites in a separate bowl until stiff. 

  6. Gently combine the broccoli mixture to the egg whites or vice versa and pour into oven dish.

  7. Bake for about 40 minutes or until cooked and serve immediately.
