Gluten Free Corn & Carrot Fritters

Ingredients

Fritters

  • 80 grams dry chickpeas
  • 100 grams brown rice
  • 1 can corn kernels
  • 1 l carrot
  • 1 bunch parsley
  • 1/2 --- red onion
  • 2 --- shallots
  • 4 --- eggs
  • 1 level teaspoon salt to taste

Recipe's preparation

  1. Mill chickpeas and rice 2 min, speed 10

  2. Add carrot, onion, half the can of corn, shallots, parsley, salt, baking powder and eggs and mix 10 seconds on speed 7

  3. Add remaining corn and mix 5 seconds, Counter-clockwise operation speed 4

  4. Fry in coconut oil in small pikelet sized portions

    The whole family loved these!! Will add these to out weekly schedule!! I added 2 tsp of baking powder....they worked perfectly also.

    These are great! Quick, healthy and tasty. Perfect for my 1 yr old tmrc_emoticons.) I assume it's 1 tsp baking powder? Worked for me anyway tmrc_emoticons.)
