Hearty Vegetable Chilli

Ingredients

6 portion(s)

  • 3 cloves garlic
  • 1 onion, halved
  • 1 long red chillies
  • 1 red capsicum, quartered
  • 30 grams olive oil
  • 1 Medium-Large Zucchini, quartered lengthways, then sliced
  • 1 can diced tomatoes
  • 2 tablespoons TM veggie stock concentrate
  • 2 heaped teaspoons Cumin Powder
  • 1 teaspoon basil, dried
  • 4 cans Beans/Chickpeas, drained and rinsed - such as red kidney, 4 bean mix, etc
  • natural yoghurt, to serve
  • Mint - fresh or dry, to serve

Recipe's preparation

  1. Chop garlic, onion, chilli and capsicum 5 secs speed 5.

    2. Add oil and saute 5 mins, 100, speed 1.

    3. Add zucchini, tomatoes, TM stock concentrate, cumin and basil and cook 10 mins, 100, Counter-clockwise operation, speed 1.

    4.  Add beans/chickpeas, incorporate with spatula, then cook 5 mins, 100, Counter-clockwise operation, speed 1.

    5. Serve with a dollup of TM natural yoghurt and mint.  Great served with crusty bread or TM pizza bianca.

Tip

Add 1T tomato paste with the zucchini, etc for a richer flavour.

Omit 1 can of beans and replace with 1 can corn kernels or frozen corn (if using frozen corn, add 2 mins cooking time).

    I used three cans in mine (cannellini beans, black beans, and a 4 bean mix) but I think I'll do the whole 4 cans, another zucchini, corn kernels and maybe another chilli next time. I served mine with a dollop of sour cream and some grated cheese and it was very tasty.

    I'll definitely be making this again!

    I only used three cans of assorted beans and still added the tomato paste, as well as adding a green chilli also because I love spice. WOW! I loved it. A great vegeterain/vegan adaption of chilli con carne. Will definitely be a regular dish in my household from now on... Thanks so much for sharing.

    Really good! I was concerned that this might not have enough flavour in it but I was wrong. Was really tasty.

    I used 2 cans of beans and added a roasted sweet potato. Served it with black rice and natural yoghurt. I'll definitely be making this again.

    I replaced the capsicum with carrot and added a small head of brocolli and at the very end stired through spinach. I will definitely be making this again.

    Fantastic.

    I didn't have all the ingredients so had to improvise...I replaced the

    *  capsicum with carrots

    *  zuchini with green beans 

    *  chillis with peri peri powder

    * 4 cans of beans with 2 cans (1 butter beans 1 chickpeas)

    and I added chopped ham

    We had this for dinner on a baked potatoe...and again this morning on toast ...topped with scrambled egg for breakfast. A filling, healthy, quick and tasty meal both times!

    Delicious and hearty tmrc_emoticons.-)  I only added two tins of 4-Bean Mix - I can't see how 4 cans would work.  I think the mix would be way too thick with 4.  Two cans was lovely, served as a nacho mix with corn chips, guacamole and sour cream  tmrc_emoticons.)
