KCN Vegan High protein

Ingredients

  • 1 red onion, Quartered
  • 2 cloves garlic
  • 1 fresh chilli
  • 1 Capsicum, quartered
  • 1-2tsp cumin
  • 1tsp cinnamon
  • 1tsp cayenne pepper
  • 2 tins chopped tomatoes
  • 1 can Chickpeas, drained, rinsed
  • 400g KIDNEY BEANS, drained, rinsed
  • 1 tin Sweetcorn, drained
  • pinch Salt & Pepper
  • 1 lime

  • 2 cups Edamame beans
  • 2 heads broccoli

Recipe's preparation

  1. 1. Place capsicum and corriander (optional) into mixing bowl, chop 4 sec/sp5
  2. 2. Transfer into a bowl and set aside
  3. 3. place onion, garlic, chilli into Thermomix® bowl and chop 3sec/sp7 scrap down sides and repeat if neccessary
  4. 4. Add oil and saute 5mins/varoma/sp1
  5. 5. Add remaining ingredients/spices and reserved veg cook 20mins/100Counter-clockwise operationreverse/sp1. During this stage you can add your edaname beans, broccoli etc to the Varoma® and place on top cook for around 10-15min depending on you preference.

    Appears to be quite a healthy dish. Despite the kick from the cayenne, it was a bit bland without much depth of flavour. We enjoyed it as a side dish with relishes and other vegetables. Thanks for the recipe.
