Ingredients

Pesto bean soup

  • 3 garlic cloves
  • 1 red onion, 1 large or 2 small
  • 20 g extra virgin olive oil
  • 5 tomatoes, roughly chopped or 400g can of diced tomatoes
  • 2 tsp Vegetable stock paste
  • 1-2 tbsp pesto, basil
  • 1 cans Beans, four bean mix, drained and rinsed
  • 250 g sweet potato, cut into 1.5-2cm cubes
  • 40 g sour cream, optional
  • 2 pinch black pepper, freshly ground
  • to taste dried chilli flakes, omit for children

Recipe's preparation

  1. Place garlic and red onion, 4 seconds, speed 5. Scrape down.
  2. Add oil, cook 5 minutes, varoma temperature, speed 0.5. Place steaming basket on top of lid.
  3. Add chopped up fresh tomatoes OR a can of tomatoes. Cook 5 minutes, 100°C, speed 1. Place steaming basket on top of lid.
  4. Add vegetable stock paste, basil pesto and pepper. Blend 10 seconds, speed 6.
  5. Add sweet potato and cook for 12 minutes, 100°C, speed 0.5 Counter-clockwise operation"Counter-clockwise operation" . Place steaming basket on top of lid.
  6. Add in beans, cook 5 minutes, 100°C, speed 0.5 Counter-clockwise operation"Counter-clockwise operation" . Place steaming basket on top of lid.
  7. Add in sourcream and mix; 1 minute, speed 0.5 Counter-clockwise operation"Counter-clockwise operation" .
  8. Serve with extra basil pesto and buttery toast.
