Ingredients

Pop Off Curry

  • 2 sprigs fresh mint
  • 2 sprigs fresh basil
  • 1 onion
  • 1 clove garlic
  • 1 fresh red chilli, deseeded, or to taste
  • 1 red capsicum, quatered, deseeded
  • 1 zuchinni, roughly chopped
  • 20 grams oilve oil
  • 2 teaspoons cumin ground
  • juice from 1 lime
  • 400 gram can Diced Tomatoes
  • 400 gram can chickpeas drained, & rinsed
  • 400 gram Red Kidney Beans, drained and rinsed
  • 1 level tablespoon Thermomix stock paste

Recipe's preparation

    Pop Off Curry
  1. Chop basil & mint for 3 secs speed 6 & place to one side. Add onion, garlic, chilli & capsicum & chop 4 secs speed 5. Add oil & cumin. Cook for 8 mins, 100 degrees, speed 1.

    Add zuchinni, cook 3 mins, 100 degrees, speed Gentle stir setting. Puree for 10 secs speed 6.

    Add all remaining ingredients included the chopped herbs cook for 10 mins, 100 degrees, Counter-clockwise operation speed Gentle stir setting.

    Delcious served with natural yoghurt & extra herbs.

Tip

Why is it called Pop Off Curry because Suzie's young boys think it is so funny & delicious if they eat a Pop Off Curry rather than a normal curry!!

It is so great to hide any veggies in this!!

    Pop off curry - So simple but so full of flavour! A definite make-again! I used lemon juice instead of lime as I had used all the limes in the tomato and lentil dahl I had made earlier. Served with jasmine rice, dahl, Greek yogurt and naan bread, absolutely delicious! Five stars! Thanks for sharing!

    Yummy! Made this tonight for the family. I added chicken and omitted the chilli so the whole family (including 8 month old) could enjoy it. Served it with cous cous and it went down a treat. Will definitely make again. My 3 year old daughter LOVED the name too

    loved this recipe! Smells amazing and tastes great but I just have a question for the chef, 

    after the beans get added they aren't meant to be all whizzed up are they, (still in whole shape)(just checking it still tastes great I still loved it and pop off curry is definitely a hit and a remake at my house! tmrc_emoticons.) x
