Quinoa Chilli Bowl

Ingredients

  • 1 carrot

quinoa

  • 185 g quinoa

chilli bowl

  • 2 brown onions
  • 4 clove garlic
  • 1 red chilli, optional
  • 1 tablespoon extra virgin olive oil
  • 1 large jar of tomato passata
  • 1 quinoa, cooked
  • 1 Corn, tin
  • 1 KIDNEY BEANS, tin
  • 2 tablespoon smoked paprika
  • 1 tablespoon cumin
  • 1 tablespoon dried coriander
  • lemon juice, half a lemon

Recipe's preparation

    garnish
  1. wash carrot and chop end off.

    3secs/6 to grate

  2. Describe the preparation steps of your recipe

  3. cook the quinoa
  4. rinse quinoa really well under running water in the simmering basket.

    if you have time I like to soak in water for a few hours if time permits.

    Add 800g water to bowl, insert simmering bowl with quinoa in it.

    25mins/100C/4

    then remove, rinse and leave to cool.

    rinse out bowl and prepare chilli.

  6. Quarter the onions and add to Closed lid with garlic and chilli.

  7. Add olive oil 

    10mins/85/2

  8. Add tomato passata, herbs/spices, corn, 2 cups water, corn, kidney beans, quinoa

    30mins/100/2

  9. in the last minute of cooking add lemon juice (remove MC and pour into Closed lid )

  10. to serve
  11. serving suggestion:

    serve on a bed of spinach or baby kale

    top with grated carrot, some diced avocado and sour cream
