tuna & kale potato cakes

  • 4 slices bread
  • 750 g desiree or king edward potatoes, washed
  • 1 tablespoon TM stock concentrate
  • 1/2 bunch Kale
  • 425 g can tuna in springwater, drained
  • 1 red onion
  • 1/2 bunch Dill
  • 1 lemon, zested
  • 1 egg

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. place bread in jug and use turbo until fine breadcrumbs. set aside.

    place dill, lemon zest and red onion in jug. chop 2 sec, sp7. set aside

    add 500ml water & stock concentrate to jug

    peel and roughly chop potatoes

    place potatoes in simmer basket

    steam 30 mins, varoma, sp 1.

    remove woody stalks from kale, add to varoma dish and steam for at least 2 mins whilst potatoes are cooking then set aside to cool.

    remove potatoes from jug and discard steaming liquid.

    chop kale - turbo x1. set aside

    insert buterfly and return poatoes to jug. mash sp 4 until smooth.

    add tuna,kale, onion, dill,lemon and season with salt and pepper if desired. combine sp3 until well mixed.

    with wet hands form patties, dip in beaten egg then breadcrumbs and shallow fry.

    serve with salad.

Tip

I used a hamburger patty former to make nicely shaped patties but you could use hands. I made smaller versions for the kids.

    Overall, not bad dish but needs improvements...
