Chicken Pumpkin and Spinach Cannelloni

  • 500 grams butternut pumpkin, peeled and chopped into 3cm cubes
  • 75 slice pancetta, roughly chopped
  • 500 grams chicken mince
  • 250 grams frozen spinach leaves, thawed and drained
  • 200 grams smooth ricotta cheese
  • 2 garlic cloves
  • 15 grams Butter
  • pinch ground nutmeg
  • salt and pepper to taste

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

  1. Place 2 cloves of garlic into TM bowl and chop 6secs/speed 6. Remove and set aside, but don’t bother cleaning bowl.

    Add 800gm boiling water to bowl. Insert simmer basket and place pumpkin into basket. Put the lid on, place MC in, and steam for 15 mins/120/speed 4.


    While this is happening, grease a lasagne or ceramic baking dish and set aside. Preheat oven to 180 degrees

    In a large bowl, add chicken mince, pancetta, ricotta, spinach and nutmeg.

    Once pumpkin is cooked, tip remaining water out of the bowl, add reserved garlic, pumpkin, butter and salt and pepper and roughly mash for 5 secs/speed 3. Add to chicken mix and combine all ingredients.

    Don’t bother washing bowl, but add remaining garlic cloves and onion to bowl and chop for 6secs/speed 5. Scrape down and repeat for 3 secs/speed 4. Add oil and saute, with MC removed, for 5 mins/100/speed 1.

    Add passata and wine and cook or 10 mins/110/speed 1 with simmer basket on top to prevent splatter.

    When cooking is finished, add salt, pepper and sugar to taste and basil leaves. Mix for 10 secs/speed 3.

    Spoon half the sauce over the bottom of the baking dish.

    Have all your cannelloni tubes lined up. Place chicken mix into a large piping bag with a wide nozzle (or into a zip lock bag and snip off the corner to make a piping bag) and fill each tube with mix. Place in a row over the tomato sauce in the baking dish. Cover with remaining sauce and sprinkle with grated cheeses.

    Bake for approx 25mins or until golden and cheese has melted.
