Italian Style Meat Sauce for a Crowd

Meat sauce

  • 800-850 g gravy beef, chunky pieces
  • 1600 g whole or crushed canned tomatoes
  • 30 g red wine
  • 70 g Olive Oil.
  • 1 onion
  • 2 cloves Garlic.
  • 1 bayleaf
  • 1 sprig basil leaves fresh
  • salt and pepper to taste

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Meat Sauce to feed a crowd!!!!
  1. Place onion and garlic in TM bowl and chop 4secs, speed 7


    Scrape down sides of bowl and add 50g olive oil and saute 3mins, 100degrees, speed 1 without MC.


    Add Gravy Beef and saute for 10mins, 110degrees, Gentle stir settingCounter-clockwise operation without MC.


    Transfer meat and juices to Thermoserver.  Add canned tomatoes to TM bowl and puree for 10secs, speed 5.  Add 20g olive oil, bay leaf, wine and season to taste.  Add reserved meat and juices.


    Cook for 90mins, 110degrees, Gentle stir setting Counter-clockwise operation with steamer basket instead of MC.


    Taste meat and cook further 30mins if meat is not tender.

    Place in Thermoserver. 


  2. Cook Pasta as per recipe chip or use 1400g of water for 500g of long pasta. Use Varoma to strain pasta.
