If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place onion and garlic in TM bowl and chop 4secs, speed 7
Scrape down sides of bowl and add 50g olive oil and saute 3mins, 100degrees, speed 1 without MC.
Add Gravy Beef and saute for 10mins, 110degrees, "Gentle stir setting" "Counter-clockwise operation" without MC.
Transfer meat and juices to Thermoserver. Add canned tomatoes to TM bowl and puree for 10secs, speed 5. Add 20g olive oil, bay leaf, wine and season to taste. Add reserved meat and juices.
Cook for 90mins, 110degrees, "Gentle stir setting" "Counter-clockwise operation" with steamer basket instead of MC.
Taste meat and cook further 30mins if meat is not tender.
Place in Thermoserver.
Cook Pasta as per recipe chip or use 1400g of water for 500g of long pasta. Use Varoma to strain pasta.
