Marney's Dairy Free Chicken Carbonara Sauce

Ingredients

Sauce ingredients

  • 1 Large leek, (or a large onion)
  • 2 clove garlic
  • 350 gram cauliflower florets
  • 50 gram coconut oil
  • 400 gram coconut cream
  • 1 heaped tablespoon chicken stock paste
  • 2 heaped tablespoon nutritional yeast, (savoury yeast flakes)
  • 3-4 bacon rashers, cut into small squares
  • 150 gram chicken breast, thinly sliced
  • 200 gram mushrooms, thinly sliced
  • 10 italian parsley stalks, optional

Recipe's preparation

  1. Add parsley (if using)to bowl and chop 5 sec/speed 6 then set aside

    Add 20g coconut oil, bacon, chicken and mushrooms into bowl. 

    Sautee  Counter-clockwise operation 5mins/120°/Gentle stir setting Tip contents of bowl into pre warmed Thermoserver to stay warm.

    Place leek, garlic & cauliflower florets in bowl chop 3 sec/speed 7

    Add 30g coconut oil and sautee for 5 mins/120°/speed 2

    Add coconut cream, stock paste and nutritional yeast to bowl and cook 15 mins/90°/speed 1

    Beginning at speed 5 slowly increase speed to speed 9 and puree for 1 minute

    Pour sauce into Thermoserver and mix with mushroom, bacon and chicken. Add chopped parsley to Thermoserver

    Serve with zuchinni noodles, or cooked pasta of your choice.

Tip

This recipe was inspired by Nikalene from Skinnymixers healthy carbonara sauce. Warning, my version is not 53 calories, because we don't count calories - we count nutrients, but it is jam packed with healthy fats and big flavours. The chicken stock paste and coconut cream make a delicious creamy sauce, and the nutritional yeast flakes make it taste like it’s packed with cheesy goodness – whilst keeping it dairy free.

    OMG! my daughter asked for seconds!!! This has never happened before. 

    We are a Paleo family and i just tried this for the first time,  thinking "another nice try like all the others"! Boy was i wrong!

    Nice flavour, but way too much cauliflower sauce. Was more soup than pasta. Proportions were off.  Enough to feed a small army too.

    Nutritional/savoury yeast flakes are the only thing I am aware of that makes dairy free food taste like cheese. If you're not avoiding dairy, you could just add a cup of grated cheese instead. Otherwise, just omit it and see if you like it - my family love the cheesy taste though.
