Spaghetti Bolognese (mince cooked in steaming basket)

Ingredients

Spaghetti Bolognese

  • 500 grams Beef mince
  • 1 onion, peeled and quartered
  • 2 carrots, roughly chopped
  • 2-3 garlic cloves
  • 20 grams olive oil
  • 190 grams tomato pesto OR 140g tomato paste
  • 400 grams can Chopped Tomatoes
  • 1 tablespoon Stock Concentrate, I use either homemade beef or vegetable stock concentrate, otherwise use any stock you like
  • 100 grams mushrooms, sliced
  • Salt and pepper, to taste
  • pasta and parmesan cheese, to serve

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Place onion, carrots and garlic in TM bowl and chop 5 seconds, speed 5.  Scrape down sides of bowl and repeat if you want the carrots chopped finer.

     

    2. Scrape down sides of bowl, add oil and sauté for 3 minutes, varoma, speed 1, MC OFF.

     

    3. Add tomato pesto or paste and cook for 2 minutes, varoma, speed 1, MC OFF.

     

    4. Add tomatoes, salt, pepper, and stock and cook for 5 minutes, 100 degrees, soft spoon (slowest speed), MC ON.

     

    5. Place mince into the internal steaming basket. Spoon some of the sauce over the top of the mince and put the basket inside the TM bowl with the sauce in the bowl underneath. Cook for 15 minutes, 100 degrees, speed 1. About halfway through cooking break up mince with a fork.

     

    6. Remove the internal steaming basket and tip mince out of basket and into the TM bowl with the sauce. Add mushrooms and use a spatula to stir the mince and mushrooms down into the sauce. Cook for 4 minutes, 100 degrees, reverse, soft spoon (slowest speed).

     

    7. Serve with pasta and top with parmesan cheese

    This is delicious! My eight year old is very fussy re Bolognese sauces but loved this one (as did my three year old).

    I had no mushrooms but added celery and red capsicum.

    My mince was only 430gm so I added some rinsed and soaked lentils and quinoa.

    Delicious!

    Great recipe!
    I am famous for my Bolognese sauce, my son calls it "Lisa Sauce"! But it takes over 2 hours to make. Even though I love my sauce this recipe is a great quick midweek meal. My son said it wasnt as good as mine! But it was still yummy! (16 year old)

    Thank you, love this recipe! The mince is a great consistency, not too fine. As I am vegetarian I remove a small amount of sauce before adding the basket & mince then continue cooking for the rest of the family. Love that it saves doing two separate meals.

    I love the idea of cooking the mince in the basket! We had barred the Thermomix for cooking any mince because it makes it too fine in consistency. This is the perfect solution! I added one carrot and one zucchini and used passata rather than pesto and tin tomato, as it's all I had. Everyone loved it!

    I'm so pleased with this recipe.

    This is the first time I've commented on a recipe and I have to say that cooking the mince in the basket is a great idea. I've cooked spaghetti bolognese before, but like another comment left, the mince was too mushy for us. I didn't have all the ingredients listed in the recipe, so I added some tomato paste & vegetable stock paste and it tasted terrific. Thanks for sharing your recipe.

    Great idea cooking the mince in the basket!  My family (and I) haven't liked other bolognese sauces done in the thermo because the mince is too minced.  I did add mixed herbs as someone suggested and heaps more veg!!  I did use the veg stock concentrate  instead of powder as well.   

    I did find that there was a lot of liquid when serving up. No quite sure why.  Any ideas?  I did use fresh tomatoes instead of canned and I think I put a litttle bit of water thinking it might be too dry without the "juice" from a can.  Not sure what happened. Veg stock liquid too?
