ANZAC Biscuit

  • 240 g plain flour
  • 200 g raw sugar
  • 85 g Desiccated Coconut
  • 150 g rolled oats
  • 70 g sesame seeds
  • 150 g Butter
  • 4 tablespoons Boiling water
  • 2 tablespoons golden syrup
  • 2 tablespoons molasses
  • 1 tsp bicarbonate of soda

Recipe's preparation

    Method
  1. Preheat oven to 160°C. Line two baking trays with baking paper and set aside.
  2. Add flour, raw sugar, coconut, rolled oats, sesame seeds to the bowl. Mix 8 seconds/Counter-clockwise operation/speed 4. Set mixture to the sid ein seperate bowl to use later
  3. Place butter, golden syrup and molasses into mixing bowl and heat 2 min/60°C/speed 2. Scrape down sides of mixing bowl with spatula.
  4. In a seperate bowl disolve baking soda in boilinng water. Add to bowl.
  5. Add flour, raw sugar, coconut, rolled oats, sesame seeds to the bowl.
  6. Combine 8 sec/Counter-clockwise operation/speed 4. Repeat until desired consistancy.
  7. Place 2 teaspoons of mixture onto prepared baking tray and flatten to approx. 5 cm in diameter. Repeat with remaining mixture (makes approx. 30 biscuits), leaving space inbetween for biscuits to spread during baking.
  8. Bake for 9-12 minutes (160°C) until golden brown. Remove from oven and allow to cool on trays for 5 minutes. Transfer to a wire rack and allow to cool completely or serve warm.
