Ingredients

Chutney

  • 2 extra large red peppers, cut into thin strips
  • 6 green chillies deseeded, cut in half lengthways
  • 1 red onion quartered
  • 2 large tomatoes halved
  • 60 g dried apricots, (whole or halved)
  • 1 clove garlic
  • 50 g olive oil
  • 3 tablespoon balsamic vinegar
  • 2 tablespoon Dark Brown Sugar
  • 100 g red wine
  • 1 pinch salt to taste

Recipe's preparation

  1. Place onion, garlic and chillies into Closed lid"Closed lid" and chop 5 secs on speed 5.  Add tomatoes and chop 4 secs on speed 5.  Add all other ingredients to Closed lid"Closed lid" and cook for 35 mins at 100 degrees on speed 1.5.

     

    Place into sterilsed jars and seal.

  2. Describe the preparation steps of your recipe

Tip

Serve with any cold meat or fish.  Great with crusty bread or add to your pizza base for that bit of extra zing.

Long medium green chillies have been used for this recipe, however if you like it hot, try using the small red chillies to your tastebuds.

This recipe makes about 800g quantity of chutney.

    I'm fairly new to the thermomix and having previously hated cooking (never did it...lived off toast and pasta), I'm now completely hooked! This recipe sealed the deal for my family in believing in the Thermomix too. I made the chutney in two batches, one batch with a single red chilli, and one batch (for my father-in-law) with 3 red chillis. 

    Thank you for providing a delicious recipe and great instructions. Now I'm off to try baking a cake... tmrc_emoticons.)
