Bean-Free Sundried Tomato Hummus

  • 300 g zuchinni, cubed
  • 2 cloves garlic
  • 35 g lemon juice
  • 50 g Evoo
  • 150 g hulled tahini
  • 2 teaspoons pink salt
  • 60 g Sun dried Tomato Strips
  • 2 sprigs parsley
  • paprika, for garnish
  • Evoo, for garnish

Recipe's preparation

  1. Add Parsley to bowl and chop 10 seconds speed 8


    Add Zuchini, garlic, lemon juice, olive oil, tahini and salt and blend for 10 seconds on speed 5


    Scrape sides and blend again for 10 seconds on speed 5


    Add sun dried tomatos and mix on reverse speed 4 for 10 seconds


    Let sit for 10 minutes for the flavours to infuse


    Serve in a bowl and top with a sprinkle of paprika, olive oil and more sundried tomatos or parsley
