Beetroot Dip

  • 500 ml of water
  • 2 Raw Beetroots, unpeeled approx 400grams
  • 1 clove garlic
  • 100 grams Salted Cashews
  • 50 grams cubed soft Feta (Danish Feta is recommended)
  • 10 grams lemon juice
  • 10 grams EVOO (olive oil)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cook Beetroot
  1. * pour water into bowl 

    * place simmering basket into mixing bowl 

    * add beetroot to simmering basket (unpeeled & halved if required)

    * place lid and mc onto mixing bowl and cook for 30 mins/ 100degs / speed 2

    * once beetroot is cooked remove simmering basket from mixing bowl with spatula and allow to cool for 10 mins.

    * once cool peel, top & tail and quarter beetroot. (using rubber gloves in this step will prevent staining of hands)

     

     

  2. Prepare Dip
  3. * drain liquid from mixing bowl and dry ready to mix dip

    * place prepared beetroot, cashews and garlic into mixing bowl and mix for 10secs/ speed 7

    * scrape down sides and loosen from bottom of bowl

    * add EVOO, lemon juice and feta to mixing bowl and mix 30secs/ speed 7

    * check consistency of dip and repeat previous step if required.

    * pour into airtight container and chill till ready to serve

Tip

Dip will keep in fridge for up to 48hours

Depending on size, beetroots may be cut in half at cooking stage to fit in the simmering basket

Serve with crackers and vegetable chips

    Thank you! This dip is easy and after the initial cooking of beets it is quick and every time I make it for an occasion everyone loves it and can't get enough.
