Clone of Strawberry Jam

strawberries

  • 1000 g Fresh strawberries
  • 700 g Coconut sugar/rapadura
  • 1 lemon, Juiced
  • 2 tbsp Gelatin powder

Recipe's preparation

    METHOD
  1. Hull the strawberries and pop them into bowl whole.

    Add coconut sugar and juice of one lemon.

    Cook for 20 min/Speed 2/Reverse]/100°c/MC out - basket on top.

    Add gelatin powder and cook another 10 minutes.

    With soup ladle or tablespoon, skim off the white froth on the top. This won't look nice when jam sets.

Tip

For a smoother jam, chop on speed 2-3 for a few seconds at the end.

 

Boil jam jars (I bought mine from Red Dot for $1 each) for 10 mins and take them out just before you put the jam inside with a soup ladle. 

 

Cool on bench and refrigerate to preserve. These make wonderful gifts!
