Ingredients

400 g

  • 140 g soy milk
  • 2 teaspoon Dijon mustard
  • 1 teaspoon honey, (Optional, can omit if preferred)
  • 2 teaspoon vinegar, (I prefer Rice Wine or White Balsmic, but any white vinegar will work)
  • 250 g Avocado Oil, (Macadamia or other light tasting oil would work. Olive oil may taste too strong for this recipe)
  • salt, to taste

      TM 5
If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

I just tried a recipe using aquafaba instead of soy but it didn’t whip up. Tasty but runny. I will try this next time.
