Easy "middle eastern" carrot dip

Ingredients

8 portion(s)

  • 1000 grams Carrots, chunks
  • 1 onion large
  • 2 cloves garlic
  • 1 teaspoon cumin
  • 1 teaspoon tumeric
  • 1 tablespoon middle eastern spice blend or paste, e.g Gourmet garden Moroccan seasoning

  • 60 grams extra virgin olive oil

Recipe's preparation

    steam carrot chunks
  1. place the carrot chunks in varoma. place 1000 g water in bowl. set 15 mins, at varoma temp on speed 1. 

     

    When steamed and tender but not mushy, set aside to cool. Dry bowl.

  2. Place peeled and roughly chunked onion and 2 garlic cloved in bowl. Process 5 seconds on speed 7. Scrape down bowl.

    Add spices and 30 g EVOO.

    Cook 4 mins on 100 degrees speed 3 reverse.

  3. Add the slightly cooled steamed carrot and 30 g EVOO.

    Process 30 secs on speed 7. Scrape down bowl.

    Process 30 secs on speed 7. 

     

    Place in bowls and cool. Refrigerate.

     

    Enjoy with vegetable sticks or crackers of choice.
