  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 2 teaspoons ground cumin
  • 60g Lemon Juice or Wine Vinegar
  • 4 tablespoons olive oil
  • 1-2 cloves garlic
  • 5g ginger, fresh
  • salt & pepper
  • flat-leaf parsley, chopped for garnish

Recipe's preparation

  1. Put the garlic and ginger in bowl and chop for 6 seconds speed 5. Set aside.


    Put carrot in bowl and chop for 4 seconds speed 5, until roughly chopped.

     

    Add 250g water and cook for 15 minutes, 100 degrees, speed 1. The carrots should be soft but not mushy.

     

    Drain the water using the basket then add the carrots, ginger and garlic and the rest of the ingredients (excluding the parlsey). Mix for 10 seconds speed 5. Check the consistency and mix again if needed.

     

    Add the parsley when serving.
