Paste

  • 45 grams crustless white bread
  • 60 grams tarama paste (see note)
  • 10 grams onion
  • 300 grams olive oil
  • 30 grams lemon juice, approx 1 lemon
  • 30 grams cold water
  • additional water for soaking bread
  • black salt and oil for garnish

Note: Tarama paste is available loose or in a can at good delicatessens.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Tarama
  1. Put a jug on the TM lid and weigh 300grams of olive oil , set jug aside.Place bread in a bowl with enough water to cover and allow to sit for at least 3 minutes so the bread absorbs the water. Lightly squeeze excess water out of bread and place wet bread into TM bowl. Add tarama paste, lemon juice and onion and process with MC in place 1min Sp6 or until smooth.Scrape down sides and lid.

    Put butterfly into TM bowl place lid with MC in place and set timer for 4mins SP3 . Add oil onto lid in a thin steady stream until smooth and emulsified. Remove butterfly and scrape down sides and add 30 grams of water. Put on lid and MC and process for a further 30 secs  SP8. This step loosens the mixture .If it is too thick for your liking add a bit more water at this step.

    Refrigerate until required. Serve in a bowl with salt and oil as a garnish.

Tip

You can use chopped garlic as an alternative to onion if you prefer.

If you can't find black sea salt use chopped black olive instead as a garnish.
