Green Tomato Pickle

Ingredients

2 litre(s)

  • 500 gwashed and quartered green tomatoes
  • 650 gpeeled and quartered onions
  • 1 tsp salt
  • 150 g water
  • 300 g vinegar
  • 1/4 tsp ground all spice
  • 4 shakes cayenne pepper
  • 1 tblsp mustard powder
  • 220 g sugar
  • 1 tsp tumeric
  • 1/4 tsp curry powder
  • 4-5 tblsp cornflour or flour (depending on desired consistency)

Recipe's preparation

  1. 1. Place tomatoes in TM and chop for 8 sec on speed 4 using spatula - transfer to a large bowl.



    2. Place onions in TM and chop 8 sec on speed 4 using spatula - add to the green tomatoes and combine.



    3. Spinkle salt over tomato and onion and leave covered overnight.



    4. Place tomato and onion mixture into TM. Add vinegar and water.



    5. Cook 13min, 100deg. Reverse + speed 2.



    6. Add all remaining ingredients except cornflour or flour. Cook 20mins, 90degs. Reverse + speed 2.



    7. Add cornflour or flour and mix 2min, reverse + speed 3. NB. Make a paste of the flour and a bit of water if you are worried about getting lumps.



    8. Bottle, seal and lable.

Tip

My girls love this on bread w/cheese and toasted under the grill.  Yum!

Hubby loves it on brussel sprouts.  Enjoy!

Also, it you cook it a little longer - say extra 5 min or so - it will go a little darker and the flavour will be a little more mellow.  It just depends on your own taste really. Wink

    I haven’t been on the community for a couple years and so have missed all the lovely comments. I just wanted to say a big THANK YOU!

    I was looking up my recipe to share with my daughter and what a lovely surprise. I’m so glad you all enjoy it. And all the tweeking of the recipe is great! That’s the best thing about home cooking.... being able to adjust flavours to suit our own family.

    kwhite19: Hi, I haven’t been on this community for a while and have just seen your question. So sorry! When you pour in your pickle while it is still hot and put the lid on straight away it will seal as it cools. It keeps for a couple years.

    Relish and easy. Not quite same flavour as mums but very yummy anyway. Don’t over do the vinegar. I used brown I would add a little less next time. Needed more salt, sugar and marginal more curry for my taste buds.

    This is delicious! I made a batch without onion (just used 1.15kg of tomatoes) that was still fabulous for anyone who can't tolerate onion. I also used mustard seeds instead of powder (didn't have any powder) and it still tasted pretty good to me.

    Oh, as for storage.  When it is sealed in the jar it will last for months in the pantry.  Once you open a jar, store it in the fridge and it will keep for quite a few weeks.

    Hi All, new to using my Thermomix and just made this pickle. It tastes lovely but just want to check I did it right. When adding the cornflour, do you just plop it in the top before blending, or do you make it into a paste first. I just added it without making into a paste and ended up with some unblended cornflour that I had to carefully remove, a fair bit latched onto the blade. Maybe should have added slowly whilst blade was stirring? Also, can anyone suggest a refrigeration storage time once made. Thanks!

    Hello All, 

    As an experienced cook & having made this twice now (with my green Tommie's from garden), I can say that this recipe is fairly foolproof. I've just opened a jar of my 2nd batch, & although slightly runnier, still fine due to texture. But there is reason 4 this:

    The 1st batch I made, I thought 1tsp salt would not be enough, so I did 2tsps. This did produce quite a lot of liquid, so I held back about half of it, then followed rest of recipe precisely. Turned out very nice & the corn flour made it a nice thickness, nice & spreadable. 

    The 2nd batch I didn't hold back the liquid, wanted to see what would happen, so it all went into the TM, & then somehow, quite silly of me, & not quite sure why I did it, I even put less corn flour into the mix. In the end, it was fine, just a little runnier. 

    So to conclude, I don't think the liquid matters so much, as long as you do use the 4-5 tablespoons of cornflour (& I was quite liberal & not precise in my 1st batch). Spices can also be varied according to taste & I'm sure I added more, as I thought the recipe as is wouldn't be enough flavour for my taste.  I look forward to Feb/March 2014 for my next batch of green Tommie's to make it again.  Thanks for a great recipe!!

    Due to Ros comment I was thinking I probably should add a tip to the recipe to say that if the tomato and onion mixture is too liquidy to not add all of the liquid from the mixture or maybe omit the water. How did you find yours?  It is quite difficult to get my hands on green tomatoes so I haven't been able to test out the recipe again myself.  Will have to wait till next season.

    Hi Ros,

    Nice to hear from you.  Is it very runny?  I don't seem to have a lot of extra liquid in mine.  I just throw it all in!  If it is too runny, maybe you could cook it a little longer to reduce the liquid content a little or add more cornflour.  Sometimes the tomatoes can be a little juicier so this is what I do.  If you have already bottled your pickle you can pop it back in the TMX again, heat it up and add more cornflour.  I have had to do this before - when I didn't have my TMX yet! tmrc_emoticons.)

    One little worry that I had during the recipe - after getting the tomato/onion mixture out of the frig where it has been sitting with the sprinkling of salt, should I have discarded any moisture?  Since you didn't say to do that, and further liquid was added, I opted just to pour it all in.  Please tell me what I should have done.  tmrc_emoticons.)
