- 1 Handful basil leaves
- 1 handful flat leaf parsley
- 1 Handful baby spinach
- 1 small garlic clove
- 1 tablespoon capers
- 500 g Grapeseed Oil
- 2 eggs, separated
- 1 tsp Whole grain mustard
- juice from 1 lemon
- salt & pepper
Recipe is created for
Add parsley, basil, spinach, garlic & capers to bowl. Chop for 5 secs/speed 9
Scrape down the sides Add lemon juice, mustard, salt & pepper & both egg yolksPut in the butterflyWhisk for 20 secs / speed 4Put on the MC & fill the base of the lid to the top of the rim with grapeseed oil. Hold the MC down as it will "bob" up with the oil As soon as it's almost ended, fill that lid again to the top of the rim with grapeseed oilYou'll notice that this is exactly 500g
After a few minutes when the oil is in, reduce the speed to speed 2 & remove the MC. Add in the whites of the egg & continue to mis got about 10 secs.
Your mayo is ready. Taste if it needs additional lemon or salt & then pour it into your jars & refrigerate.
