  • --- Handful of mixed herbs (about half a cup), I used a mixtire of Rosemary, chives parsley and oregano
  • 30 g Salted Cashews
  • 25 g parmesan
  • 20 g olive oil
  • 45 g Kale, (a big handful)
  • 1/2 Lemon (juice only)

    Pesto
  1. Put all ingredients in the Thermomix or high powered blender and blitz on speed 7 for 5 secs, scrape down the sides and blitz again on speed 7 for 5 secs.

    I had an abundance of kale in the garden, a bit like the previous comment...needed it used up!

    This did not disappoint, I also added a good handful of fresh herbs (chives, oregano, mint, basil) from the garden. Very nice recipe, thanks for sharing!
