Kale & Walnut Pesto

  • 1 clove garlic
  • 35 g walnuts
  • 55 g kale leaves, leaves only, roughly torn
  • 35 g olive oil
  • 1/2 --- lemon, juice only
  • 55 g parmesan, roughly chopped
  • 1/2 tsp sea salt

Recipe's preparation

    Kale & Walnut Pesto
  1. Put garlic, walnuts and parmesan in the bowl and blitz 8 seconds / speed 9

    Add salt and kale and chop 5 seconds / speed 6

    Add oil and lemon juice and combine all together 5 seconds / speed 4 

    Makes about 1 cup

Tip

Can be kept in the fridge for 3 - 4 days in an airtight container, just put a layer of olive oil on the top before sealing.  Can be frozen.  This pesto goes really well as a dressing for pasta

    Delicious.  Very easy to make and lovely on pasta.  kids asked for it to become a regular!  i put lots of freshly ground black pepper on mine, which made all the difference.  Balances out the lemon.
