  • 500g kumquats, chopped in half pips removed
  • 250g sugar
  • 2 shallots
  • 50g currants
  • 2 tsp ginger, i had no fresh which i think would be nicer
  • 2 star anise
  • 1/2cup orange juice
  • 4 cardamom pod, crush and used seeds only
  • 1/2 cinnamon stick, i used ground
  • 50g water

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    relish
  1. chop shallot 2 secs speed 6 ,scrape down add everything else and cook 10mins/120/speed .5/ rev with basket instead of mc

    then lower heat to 100/speed.5/ with basket cook approx further 15mins .just keep checking i just did till thick and syrupy also skin was soft.you can add extra cooking time but do in 5min lots.

i used a t5 but you could do in the tm31

    This a really tasty recipe, I love it. Have made it on a couple of occasions. It could very well be used on a cheese board, or as a relish with cold meat, but mostly with curry in place of mango chutney.
    Very important to note that the thermomix speed is 0.5 (ie slow), not 5 as the previous person mentioned. Also reverse speed. Very important to know, as I also mis-read it, and did the first 30 seconds on speed 5, not reverse, so everything including the cinnamon stick was basically blended. Not ideal, but I changed all the settings and finished product was still really good. Thanks. Its a keeper.

    Thank you for the recipe conversion Thermo-envy.  I made the goodfood version last cumquat season and was keen to make it again.  You have omitted the 3 cloves in original recipe but I included them as I really liked the flavour.  I did halve the sugar quantity trying to reduce sugar intake in our family.  It was a bit tart so I'll probably use 200g next time.  I thought speed 5 on my TM31 was way too fast even on reverse so I kept it on speed 1.  With family and friends having cumquat trees this will be a regular in our household.  Great with meats especially pork and a perfect accompaniment to a cheese platter.
