Lee's Zuccini Pickles
- 1000 g Zucchini chopped into large chunks
- 600 g Onion cut into halves
- 1 portion Whole Small Red Capsicum
- 2 clove garlic
- 2 cup --- vinegar
- 60 g salt
- 1/2 level tsp mixed spice
- 1 level tbsp curry powder
- 2 level tbsp mustard powder
- 1 level tbsp tumeric
- 2 level tbsp Cornflower

Recipe is created for

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Place garlic in mixing bowl. Chop 5sec/speed 6. Scrape down sides with spatula
- Add onions, zuccini and Capsicum. Chop 3sec/speed7. Scrape down sides. Repeat for a finer pickles.
- Sprinkle salt over the top. Leave to stand overnight.
- Morning- at this point its good to start sterilising jars.
- Drain out excess liquid
- Add vinegar and cook 100deg/5min/speed1
- Add sugar and cook 10mins/100deg/speed1
- Add mixed spice, curry powder, mustard, turmeric and cornflower. Cook 10mins/100deg/speed1
- Bottle into sterilised jars and seal while hot.

Tip
 sometimes may require longer cooking time at final step. If looks too runny repeat final cook.
