Mexican Salsa

  • 1 can Tomatoes Tinned
  • 2 fresh tomatoes
  • 1 red capsicum
  • 2 cloves garlic
  • 1 bunch fresh coriander
  • 0.5 red onion
  • 1 tablespoon tomato paste
  • 1.5 teaspoons ground cumin
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 0.5 - 1.0 teaspoons dried chilli flakes, or to taste

    Add all ingredients to jug and pulse 2 or 3 times until you get desired consistency.

    we made this to go with wraps and mince, it went nicely with it. Although next time i think i would halve the recipe.
