- 1cm cube fresh ginger
- 6 portion pears, peeled and cored
- 1/4 tsp yellow mustard seeds
- 250 g sugar
- 100ml port wine or sweet sherry
- 100ml dry white wine
- 100 g sultanas
- 1 pinch salt
- 1/4 tsp cinnamon
- 3 cloves
- 1/4 tsp mixed spice
- 1/4 tsp sweet paprika
- 1 pinch black pepper
- 1/4 tsp ground ginger

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- 1. Peel and core 6 pears, 1 red onion, 1 cube fresh ginger and add to TM5. Blitz on 4 for 10sec until consistent size.
2. Add spices, sugar, port, white wine, salt and sultanas. Reverse speed 1, 55mins, 100c
3. Pour into sterilzed jars and refrigerate

Delicious and fantastic use of excess pears off mates' tree.
I got heavy handed with the spices, more than the recipe, which I won't do next time.
We have enjoyed this with pork chops, cheese and with roasted chook.
