Red Capsicum with Feta and Cashew Chunky Dip - ThermoFun

Ingredients

Dip

  • 250g red capsicum, (one large) quartered
  • 150g Unsalted Cashews
  • 15g olive oil
  • 75g feta cheese
  • 20g Greek natural yoghurt
  • 1 tbsp balsamic vinegar
  • 1 tsp white vinegar
  • 30g Parmesan cheese, cubed
  • 1 clove garlic, peeled
  • 1 red chilli deseeded
  • basil, dried - generous sprinkle

Recipe's preparation

    Red Capsicum with Feta and Cashew Chunky Dip
      1. Place all ingredients in TM bowl and chop 1 sec / turbo.
      2. Scrape down and repeat.
      3. Enjoy dip with crackers!

     

    This is converted by using the ingredients from "Wattle Valley" Red Capsicum with Feta and Cashew Chunky Dip.

    I halved the recipe except for the feta and olive oil. Left out the Greek yogurt but added some pine nuts and used fresh basil. Sensational.

    Perfect thank you Leonie. I had read some of the other comments to roughly blitzed my cashews prior to adding anything else  - was a very coarse meal texture (could only find roasted & salted cashews so had to use them).I roasted my capsicums (personal preference being the only reason) and I only had 200g and so reduced some of the ingredients accordingly but it was absoutely divine. 

    A perfect recipe thank you so much. I usually find the parmesan overpowering in the store bought one's and my hubby usually ends up eating it all. That won't be happening ever again!

    Made a couple of your dips today for afternoon snacks. Dissapeared before my eyes! This one is so tasty, one of our favourites. My capsicum was a very meaty one, so I added about 40g cashews to compensate for the extra moisture. Thx!

    Slight variation ...

    I chargrilled the capsicum (and skinned them) and used mascopone instead of yoghurt. I had no issue with exces liquid - probably because of the mascapone but the char grilling may have dehydrated the capscium too. Used about 4 cooked capsicum to make up the same weight as in the recipe. It was a hit on Christmas day.  Yum!

    I loved this one too! 

    Followed advice in some of the comments and a) roasted (and cooled) the capsicum first; b) reduced the olive oil to 30g and c) reduced the yoghurt to 30g too. 

    Served with the grain-free crackers (from this site also).

    So delicious! Thanks for sharing the recipe Leonie tmrc_emoticons.) I also turboed 3 times as I still had big lumps of nuts after 2 - alas I had no lumps of anything after 3! Amazing what a difference 1 turbo makes! Will try with less EVOO and make the day before next time - super yummy!

    I have made this twice in the last week. Enjoyed by everyone. I roasted the capsicum (more flavour)  and peeled the skin off. Good texture, flavour improves the following day. A definite winner tmrc_emoticons.)

    Great!I made a few alterations...I skipped the EVOO all together,  reduced the yogurt to 1 tablespoon and added 2 tablespoons of almond meal to absorb some of the juice from the capsicums. I'd suggest making the day before as it sets up nice n firm and the taste/texture improves on sitting overnight in the fridge.Thanks for sharing

    oh dear!  Would've been like soup!!!  tmrc_emoticons.;)    I even do mine for 2 quick presses (so that each press the "1" second display does not even appear!  So I guess it is best with 2 half second presses!  Hope this makes sense!!

    Thanks Leonie, this tastes great! My husband scoffed it!  But for some reason mine was rather runny and sloppy? My capsicum was only 210g...any suggestions? Apart from that it's Delish and a definite  remake!
