      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Set aside a sterilised jar.
    2. Place lemon zest into mixing bowl and mill 10 sec/speed 10. Scrape down sides of mixing bowl with spatula.
    3. Add 80 g honey and 60 g unsalted butter, cut into pieces then sir for 8 min/speed 4 adding 2 large eggs & 4 large egg yolks over the course of the mixing
    4. 10 min/40°C/speed 4 ( extend time by up to 5 min if needed)
    5. Once smooth & shiny 180 g freshly squeezed lemon juice and 6 min/85°C/speed 4
    6. leave in bowl to thicken and transfer to sterilised jars once thicken and cooled
