Ingredients

Sriracha Hot Chilli Sauce

  • 4-5 cloves garlic, Remove skin
  • 2-4 cloves shallots, Removed skin
  • 5 grams vegetable oil
  • 1 can diced tomotoes
  • 5 grams fish sauce
  • 15 grams rice vinegar
  • 15 grams raw sugar
  • 100 grams Thai Red Chilli

Recipe's preparation

  1. Wear gloves rubber gloves to remove stems of chilli peppers, wash and clean, dry with papper tower.
  2. Add garlic and shallots into Closed lid"Closed lid" chop for 3 sec. / speed 7 and scrape down. Add oil and saute 3 min./varoma / speed1.
  3. Add tomotes, chilli, fish sauce, vinegar and sugar, chop 15 sec. / speed 9 and scrape down. Cook for 7 min./ varoma / speed 2.
  4. Blend 2 min/speed 10 slowly increasing speed. Be careful with heat, or allow it to cool completely and blend it. Transfer to sterlised jars and store in refrigerator.

    Further customise to your liking: add more raw sugar or vinegar and blend 1 min / speed 10.

Tip

You can use all types of chilli to your taste

    I substituted a small brown onion for the shallots, and used 50 grams of Thai chillies, I didn't adjust the quantities of other ingredients. It turned out perfectly.

    Hi, I did not mention to use lemon in my recipe, I use rice vinegar. If you want to make it again try with rice vinegar and see what the difference it makes on this recipe in your experinces. Sometime Lemon can be overpowering and affects or react to the ingredients.

    This is super hot and yummy! Just the recipe that I needed to help use up 1kg of Thai chillies that we picked from our garden. I swapped out the vegetable oil for light olive oil and used honey instead of sugar. I will have to make more jars of it for friends 🌶🌶🌶

    Can a nyone help me with what cloves of shallots are? Spring onions or the other type of shallots? I have never heard either of them referred to as "cloves"

    I've made 3 sauces with a variety of heat as I had so many chillis great sauce very easy and so quick. I did use jalapeño peppers in one lot so made a thicker sauce bit still lovely flavour
