      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Quince Paste
  1. Wash & roughly chop quines. Do not peel, but remove pips.Add water into TM bowl with quinces and cook 15mins, 100 degrees, speed 1-2.

    Puree slowly from speed 1-9 for 1 minute.

    Remove puree & insert butterfly. Weigh puree back into TM bowl & add an equal amount of white sugar.

    60mins, 110 degrees, speed 3 For TM5. Or 60mins, varoma, speed 3 for TM31 .

    Pour into containers or moulds of any size. Leave at room temperature for 12 hours. When set, cut into wedges & store in sealed containers in the fridge.

Tip

This will keep in the fridge for months.

I usually do puree step, then freeze, so that i can make it fresh all year round, not just in quince season.

    when mine didnt set i poped it all back into the thermomix I added another 200g of sugar recooked for 10min at a time and it turned out perfect. The way I tested if it was ready is I got a plate and with a teaspoon put a blob on it if it held its shape i found it was set

    Yeah mine isn't set either - more like quince jam/spread. I've put mine in the fridge after 24+ hours set aside at room temperature. I wanted paste as well - with sharp, crumbly cheese - yum!

    Tastes nice ... but not set all the way through.  Left it sit for 24 hours.  What do I do now?  It's just like quince jam (I wanted quince paste!!) :/

    I'm lucky enough to have tried Nat's quince paste that she has made herself!  It's absolutely amazing! So yummy and highly recommend this recipe!
