Recipe is created for
TM 5
If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Soak pine nut in water for 10 minutes. Drain thoroughly.
Combine pinenuts and garlic in the mixing bowl and chop for 5sec/Speed7. Scrape down the sides of the mixing bowl with the spatula.
Add spinach, basil, lemon juice, nutritional yeast and salt into the mixing bowl and chop for 10sec/Speed6 until the pesto is the texture you like. I prefer mine to still be a little bit chunky. Scrape down the sides of the mixing bowl with the spatula.
Slowly drizzle olive oil in a steady stream through the hole in the lid at Speed 4 until combined.
Cover and stored chilled in the freezer for at least one hour to allow the flavours to develop. You can pour a thin layer of olive oil on top to keep the pesto a bright green colour.
