Ingredients

1 jar(s)

  • 60 grams spinach, fresh
  • 40 grams basil,fresh

  • 1/2 teaspoon himalayan sea salt
  • 35 grams extra virgin olive oil

Recipe's preparation

  1. Soak pine nut in water for 10 minutes. Drain thoroughly.

Combine pinenuts and garlic in the mixing bowl and chop for 5sec/Speed7. Scrape down the sides of the mixing bowl with the spatula.

Add spinach, basil, lemon juice, nutritional yeast and salt into the mixing bowl and chop for 10sec/Speed6 until the pesto is the texture you like. I prefer mine to still be a little bit chunky. Scrape down the sides of the mixing bowl with the spatula.

Slowly drizzle olive oil in a steady stream through the hole in the lid at Speed 4 until combined.

Cover and stored chilled in the freezer for at least one hour to allow the flavours to develop. You can pour a thin layer of olive oil on top to keep the pesto a bright green colour.

Love this recipe, so tasty and vibrant - you don't miss the cheese at all. Works well with any leftover fresh herbs you have in the fridge too.
