Worcestershire Sauce

Distilled White Vinegar

  • 400 grams Distilled white vinegar
  • 150 grams molasses
  • 100 grams tamari or soy sauce
  • 70 grams tamarind concentrate
  • 3 tablespoon yellow mustard seeds
  • 3 tablespoon salt
  • 1 teaspoon Whole Black Peppercorns
  • 1 teaspoon whole cloves
  • 0.5 teaspoon curry powder
  • 5 pod cardamom pods
  • 4 to taste dried chillies
  • 3 cloves garlic, Peeled
  • 1 stick cinnamon
  • 2 --- Anchovy fillet
  • 1 --- brown onion, Skins off, halved
  • 1.5 cm piece of ginger, Peeled

Recipe's preparation

  1. Place anchovies, onion, garlic, ginger, and all the spices (mustards seeds, salt, peppercorns, cloves, curry powder, cardamom pods, chillies, cinnamon) into the clean and dry bowl.  Mix for 10 seconds, speed 9.  Scrape down the sides of the bowl

     

  2. Add the vinegar, molasses, tamari/soy and tamarind.  Mix for 10 seconds, Sp 5.  Then cook for 7 minutes, at 100 degrees, speed 2.  Scrape down the sides and then cook for an addition 5 minutes, at 70 degrees, speed 1.

     

  3. WHILE Step 2 is cooking, put sugar into a suacepan and cook on a medium heat until dark and syrupy (approximately 4-6 mintues).

     

  4. Slowly and CAREFULLY, spoon sugar mixture into the thermomix bowl - please be careful of the splatter that will occur!  Mix for 10 seconds on speed 4.  Then cook for a further 5 mintues, at 70 degrees, on speed 1

     

  5. Transfer to a glass jar with a tight fitting lid and refrigerate for 2-4 weeks.  Sauce can then be strained and returned to jar.  Can be stored in the fridge for around 10 months

Tip

Please notice that this sauce really needs to sit for 3 weeks before using.   It "can" in a pinch be used straight away, but much better once matured!

    Have just made this and it's in the fridge. Will rate it when I get to try in about 3 weeks time tmrc_emoticons.-) Smells pretty good though I must say.
