XXX Oriental Chilli Sauce

  • 250 grams Hot small red chillis, stalks removed
  • 2 --- brown onions, peeled
  • 5 cloves garlic, peeled
  • 4 tablespoons tamarind paste
  • 4 tablespoons fish sauce
  • 5 tablespoons palm sugar
  • 2 ginger, large knobs peeled
  • 1 tablespoon chardonnay vinegar

Recipe's preparation

  1. Add all ingredients except the chillis to the TM.  Blend at speed 7 until finely chopped.  Use spatula to scrape side of TM bowl.

    Add chillis to TM bowl, 100 degrees at speed 1 for 20 minutes.

    Check to see if chillis are cooked through and soft.

    Puree slowly up to speed 10 for 1 minute.

    Bottle in sterilized jam jars.

    Made this sauce and it was delicious. I used it as a hot sauce to accompany prawns. Can keep left overs in fridge. Would definitely make again. Very tasty, thank you.
