For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Sliced zuccchini into rounds - approx 5mm thickness and dependent on your liking.
Slice Onion into rounds or to your liking approx 5mm thickenss.
Place into a bowl
Sprinkle with 65g of salt, cover with water and let it stand for 2 hours. Drain the water down the sink - leaving the zucchini and onion remaining.
Weigh in the rest of the ingredients ( not the zucchini & onions) into thermomix bowl. Set for 8 minutes , 100 degrees speed 2 with MC on
Tip the zuchinni and onion into the bowl and then set for 5 minutes, 100 degrees speed soft (spoon) and reverse.
Have jars steralised and ready to go, scoop out the zuchinni and onions and pop into jars and then fill the jars with the remaining liquid.
Makes around 3 jars dependent on size. More liquid can be made if you require more due to jar sizes. Refridgerate after making or you can also use the fowlers varcola method for a longer shelf life. ( skip the 2nd cook and process as you would normally)

Great way to use up current glut of zucchini from our garden. Initially I only made a half batch and using half measurements of ingredients. Was a bit sweet for our liking. Second batch today made a full batch of ingredients but reduced sugar to 180g. Will definitely put a few jars away in the pantry. Very tasty recipe and a nice change from zucchini slice. Thank you.
