- 1 brown onion, peeled and halved

- 150 g smoked speck or smoked bacon, diced

- 2 Medium potatoes, diced

- 2 egg yolks, beaten
- 100 g cream
- 3 sprig parsley, chopped
- 2 tbsp chicken stock paste
- 900 g water
- 100 g pearl barley

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Add onion, celery, carrots and leek, chop 3 sec/speed 7 set aside.
Add speck/bacon. saute 3min/Varoma/speed 1.
Return vegetable mix, add butter and oil and saute 3min/Varoma/speed 1.
Add diced potato and parsnip, 1 bayleaf, 100g of pearl barley, 2 tablespoons of Chicken Stock Paste (vegetable stock paste will work) and 900g of water. Place basket on top instead of MC. cook 60 minutes/100degrees/"Counter-clockwise operation" "Gentle stir setting" .
Add sliced smoked sausage and cook 5min/100degrees/"Counter-clockwise operation" "Gentle stir setting" .
Add 2 beaten egg yolks and 100g cream. mix 15sec/speed 3.
Serve with parsley sprinkled on top.
Optional add a small tin of beans, eg cannellini, kidney or pinto.
Option - replace parsnip with celeriac.

Thanks for the info on the Austria v's swiss bit. I was given the recipe from an Austrian friend who called it that....so I added the Austrian bit to the front of the name.
As for where to find Barley, in the soup section of the supermarket, near the dried lentils and soup mixes.

will give this one a try...had trouble finding the barley in the recipe... its not mentioned in the ingredients..but i found it in the steps...just one thing... the title says 2 different things.....austria and buendner are 2 totally different places.....austria is a country and buendner is part of switzerland... its a typical swiss soup for winter, very hearty and great for those cold winter days or nights...
