Bec's Hearty Pumpkin Soup

  • 1 Brown Onion Halved
  • 20 g olive oil
  • 2 tsp cumin
  • 1kg pumpkin roughly chopped (skin removed)
  • Approx 1 litre water
  • 100 g potato
  • 100 g sweet potato
  • 1 tablespoon TMX vegetable stock
  • fresh parsley, cracked black pepper and cream, optional to serve

Recipe's preparation

  1. 1. Place onion in bowl and chop 7sec sp3

  2. 2. Remove MC and add oil and saute for 2mins, varoma, sp1

  3. 3. Add cumin and stock paste, saute for 1min, varoma, sp1

  4. 4. Scrape bottom of bowl with spatula the add pumpkin, potato and sweet potato to bowl and enough water to bring it up to 2 cms from max mark (about 4 cups or 1L). Cook 20mins, 120deg, sp 2 with simmering basket onto to stop splatters.

  5. 5. Place MC in place and puree for 1 min in total, gradually increasing up to speed 9. Sprinkle with fresh parsley and cracked pepper.


    Serve immediately.
