Blue Cheese Cauliflower & Pear Soup

  • 1 Medium Brown Onion, halved
  • 2 Garlic cloves peeled
  • 30 g Butter
  • 750-800 g cauliflower, roughly chopped
  • 2 medium pears, halved and seeds removed
  • 1-2 tbsp chicken or vegetable stock paste
  • 600 g water
  • 60 g white whine
  • 80 g blue cheese or gorgonzola
  • ground pepper to taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Add onion and garlic to the bowl and chop for 4 secs/Speed 7 

    2. Saute the onion and garlic 3 mins/100C/Speed 1 

    3. Add cauliflower and pear and blitz 6 secs/Speed 6

    4. Scrape down sides of bowl. If required, repeat; 2 secs/Speed 4

    5.  Add stock paste, water and wine

    6.  Cook 20 min/120C/Speed 2

    7.  Once finished cooking, add cheese and blend 30 secs/Speed 5, gradually increasing to Speed 9

    8.  You can garnish with some extra cheese & a slice of pear when serving
