Cauliflower Soup

Cauliflower Soup

  • 1 bunch cauliflower, 1x head outer leaves removed - chopped in to 2/4cm flowerets
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 brown onion, Quartered
  • 750 grams vegetable stock, (liquid)
  • 125 grams thick cream
  • salt & pepper, to taste
  • smoked paprika, optional

Recipe's preparation

  1. 1. Coat flowerets in 2 tablespoons of olive oil, salt and pepper to taste and 2 minced garlic cloves and bake in the oven at 180 degrees celcius for 30 minutes

  2. Soup
  3. 1. Placed quarted brown onion in TM and chop 5 seconds, speed 7

    2. Scrape down sides, add remaining 1 tablespoon of olive oil and cook for 2 minutes, 100 degrees, speed 1

    3. Add 750 grams of vegetable stock and the roasted cauliflower and cook for 15 minutes, 100 degress, speed 1 (MC off, basket on top to reduce splatter)

    4. MC on, blend until smooth by slowly increasing speed from 1 - 7 

    5. Add 125 grams thick cream (through MC hole) and mix speed 5 (MC on)

    6. MC on, cook for a further 4 minutes, 90 degrees, speed 1
