Chicken and vegetable hearty soup

Ingredients

4 portion(s)

Chicken, vegetable, soup, pasta

  • 2 clove garlic
  • 1 brown onion, halved
  • 30 grams olive oil
  • 400 grams Mixed root vegetables, (potato, sweet potato, parsnip)
  • 500 grams Thigh chicken fillets, diced 2cm squares
  • 1 --- carrot, chopped
  • 100 grams Celery, (can also use celery or both)
  • 650 grams water
  • 2 heaped tablespoons TM stock
  • 100 grams Whole meal pasta, spirals

Recipe's preparation

  1. Place garlic and onion in mixing bowl and chop 3 sec speed 7. Scrape down sides of bowl.

    Add oil sauté  3min /Varoma/ speed 1.

    Add root vegetables, 500g water, stock concentrate and cook 5 mins/ 100deg /Counter-clockwise operation/Gentle stir setting. Add chicken 6 mins/ 100 deg / Counter-clockwise operationGentle stir setting. Add remaining vegetables and pasta and water 10mins/ 100 deg/ Counter-clockwise operation[/ Gentle stir setting. Use spatula to mix pasta through during cooking. Serve with fresh crusty bread.

    All new to this but I had no idea if I had to use a speed in the section add root vegatbles cook at 100 deg for 5 min, not sure how to even get it cook. Looking at the chicken section have no idea. But will make it up as I go.

    Winner winner chicken dinner!! My kids loved it! I omitted the parsnip and added pumpkin. I used breast rather than thigh and I used wholemeal penne pasta as that's all I could find in wholemeal . Will definitely make again!

    Quick and easy soup! Didn't have celery so added more carrot. Also added around 150ml more water and some freshly ground pepper. Had to cheat also as had run out of TMX stock so used powder. I blitzed the soup at the end to shred the chicken and cut up some of the veg and pasta.
    Made this just for me - enough for dinner last night, lunch today and will make a couple of hearty lunches at work this week! Thanks for sharing - this will be a great go-to recipe this winter! I will also take the advice of others and next time prepare veg in thermomix before starting to cook soup to save hand cutting 😉.

    This soup was good. Didn't have parsnip so added a small amount of pumpkin. Cooked about 10 minutes longer than stated. Used macaroni as my pasta. Very thick - almost like a casserole.

    Love this - solid family favourite. Kids are begging me to make it so they can take it in a thermos for lunch at school. Often leave the pasta and potato out for less carbs and bulk out with other veg.

    This was absolutely delicious! Thank you! It will be my go-to chicken soup recipe.

    I omitted the pasta and used homemade chicken broth instead of water. I also only had chicken breast, not thigh and it was still so yummy! The chicken didn't end up dry like breast chicken sometimes gets.

    Made this soup for my sick husband. Nice hearty soup. I cooked the chicken separately while soup was cooking (made it faster). I also added a can of cream of corn soup at the end. Used Pumpkin, Potato and Sweet Potato and added Zuchinni towards the end. Thank you for sharing

    Just made this, super easy. I upped the veges as I only had a bit of left over roast chicken. So mine is super thick which I love. An easy way to use left over cauliflower. Thanks  tmrc_emoticons.;)

    Great recipe that was easy to follow and easy to add whatever vegetables you have on hand or your family favourites. Hubby had a second serve and I almost got it by D4. Perfect for a cold winter night.

    I added some more liquid the night I cooked it and a little more stock the next day when I had leftovers.

    I have added this to my favourites and will be cookng again soon.

    Thank you ! Delicious hearty soup, surprisingly creamy too.  I made it FODMAP friendly by using 3 shallots without white part instead of onion and garlic infused olive oil. Used carrot instead of sweet potato and total of 800 ml water to get the consistency I was happy with .

    This is so easy! Chop everything before and put aside, then follow recipe. I added an extra 100 grams of root veg and it still all fit in bowl....just under max line. If you use turnip and parsnip it helps thicken it up. Just beautiful- veg or chicken stock works! tmrc_emoticons.)

    Delicious thank you. I chopped veg before cooking and did it all at once. I needed smaller pieces due to teeth and gum problems. I also threw in some fresh herbs from the garden.

    This is a lovely hearty soup with lots of flavour. Personal taste: I reduced pasta to 60g, reduced the vege stock, added an extra carrot and some cauliflower florets. Had this for tea with crusty garlic bread.....mmm... This will be one of our fave soups this winter.
